Mini Frittatas (mini omelets)

So I found a link to a recipe for Mini Frittatas on Pinterest. We tried it this morning.

So, this time, I actually followed the instructions to a T. I even let the oven preheat!
The kids put bacon, sausage, and cheddar cheese in theirs. I put bacon, cheese, and a very small amount of green onion in mine.
At first I cooked them for 20 mins, but added an additional 2 minutes, and more cheese on top, to finish them off.
They came out very puffy! But after cooling for a few minutes, they shrank a bit.



Despite my spraying the pan with butter flavored spray, they all stuck! They were a bit hard to get out of the pan, and some was left.



The kids loved these! Not only did they get to "make" their own, by adding their choice of ingredients, they gobbled them up super fast.

It will definitely be a do over, and added to our menu on a regular basis.



However, I do have some suggestions:
Add more ingredients than you think. I found that mine could have used more salt and pepper, and more goodies inside. The half and half really fluffed them up. And as my hubby would say, you can never have too much cheese.
Oh, and I suggest more than 2 mini-muffins per person, unless you have some other side dishes. (We only had bacon and sausage, and the kids were left wanting more.)
